Description

Delightful rolls filled with savory ground beef, fresh Thai basil, and crisp bell peppers, wrapped in rice paper for a satisfying crunch.

  • 1 pound ground beef
  • 2 cups fresh Thai basil leaves
  • 1 medium bell pepper, thinly sliced
  • 1 tablespoon soy sauce
  • 1 package rice paper wrappers

Instructions

  1. Brown the beef: In a large skillet over medium heat, add the ground beef. Cook for about 5 minutes, stirring and breaking apart the meat until it’s fully browned and cooked through.
  2. Add flavor: Sprinkle the soy sauce over the meat and toss in the sliced bell peppers. Stir to combine and allow everything to cook for an additional 2-3 minutes, letting the peppers soften slightly.
  3. Remove from heat: Once your filling is cooked, take the skillet off the heat and gently fold in the fresh Thai basil leaves.
  4. Soak the rice paper: Fill a shallow dish with warm water. Dip a single rice paper wrapper into the water for 10-15 seconds or until it becomes pliable, but not too soggy.
  5. Assemble the rolls: Lay the softened rice paper on a clean and flat surface. Spoon a small amount of the beef mixture onto the lower third of the wrapper.
  6. Roll it up: Start by folding the bottom of the wrapper over the filling, tucking it neatly. Fold in the sides and then roll it tightly from the bottom to the top.
  7. Repeat the process with the remaining wrappers and filling until you have a satisfying stack of rolls.
  8. Cook the rolls: In the same skillet, add a little oil and turn the heat to medium-high. Place the rolls seam-side down in the skillet and cook until they turn golden brown, about 2-3 minutes on each side.
  9. Serve warm: Once the rolls are suitably crispy, remove them from the skillet. Allow them to cool for a minute before indulging.

Notes

For best results, make the beef mixture a day in advance and assemble the rolls just before cooking. You can also air-fry the rolls for a healthier option.
