Description

Deliciously creamy mashed potatoes combined with a savory beef filling, topped with melted mozzarella, making an irresistible and comforting dish.


Ingredients

  • 35 large potatoes (Russets or Yukon Golds)
  • 3.5 tbsp (50 g) butter
  • A bunch of fresh dill
  • Salt
  • Smoked paprika
  • Black pepper
  • Oregano
  • 1.1 lbs (500 g) ground beef (or substitute with ground turkey or plant-based protein)
  • 1 onion
  • 2 garlic cloves
  • 1 red bell pepper
  • 1 large tomato
  • 2.5 oz (70 g) tomato paste
  • A bunch of fresh parsley
  • 3.5 oz (100 g) mozzarella cheese

Instructions

  1. Prepare the potatoes: Place the peeled and quartered potatoes into a large pot of salted water. Boil until tender, about 15-20 minutes. Drain and return to the pot. Add butter, dill, salt, smoked paprika, black pepper, and oregano. Mash until smooth and creamy, then set aside to cool slightly.
  2. Cook the filling: In a skillet over medium heat, add a splash of oil and sauté the chopped onion until translucent, around 5 minutes. Add minced garlic and diced red bell pepper. Cook for another 2-3 minutes. Add the ground beef, breaking it apart as it cooks. Stir until browned.
  3. Combine the ingredients: Incorporate the diced tomato and tomato paste into the meat mixture, stirring to blend flavors. Add chopped parsley and let simmer for a few minutes. Remove from heat.
  4. Shape the nests: Preheat your oven to 375°F (190°C). On a greased baking sheet, scoop out a portion of mashed potato and shape it into a nest with a well in the center. Ensure the edges are thick enough to hold the filling.
  5. Fill and bake: Fill each potato nest with the beef mixture, sprinkle mozzarella cheese on top. Bake for 20-25 minutes, or until the cheese melts and turns golden.
  6. Serve warm: Once baked, let cool for a few minutes, then serve warm.

Notes

Make-ahead tips: Prepare the mashed potatoes and filling a day in advance. Assemble and bake just before serving for the best texture.
