- 3–5 large potatoes (Russets or Yukon Golds)
- 3.5 tbsp (50 g) butter
- A bunch of fresh dill
- Salt
- Smoked paprika
- Black pepper
- Oregano
- 1.1 lbs (500 g) ground beef (or substitute with ground turkey or plant-based protein)
- 1 onion
- 2 garlic cloves
- 1 red bell pepper
- 1 large tomato
- 2.5 oz (70 g) tomato paste
- A bunch of fresh parsley
- 3.5 oz (100 g) mozzarella cheese
Instructions
- Prepare the potatoes: Place the peeled and quartered potatoes into a large pot of salted water. Boil until tender, about 15-20 minutes. Drain and return to the pot. Add butter, dill, salt, smoked paprika, black pepper, and oregano. Mash until smooth and creamy, then set aside to cool slightly.
- Cook the filling: In a skillet over medium heat, add a splash of oil and sauté the chopped onion until translucent, around 5 minutes. Add minced garlic and diced red bell pepper. Cook for another 2-3 minutes. Add the ground beef, breaking it apart as it cooks. Stir until browned.
- Combine the ingredients: Incorporate the diced tomato and tomato paste into the meat mixture, stirring to blend flavors. Add chopped parsley and let simmer for a few minutes. Remove from heat.
- Shape the nests: Preheat your oven to 375°F (190°C). On a greased baking sheet, scoop out a portion of mashed potato and shape it into a nest with a well in the center. Ensure the edges are thick enough to hold the filling.
- Fill and bake: Fill each potato nest with the beef mixture, sprinkle mozzarella cheese on top. Bake for 20-25 minutes, or until the cheese melts and turns golden.
- Serve warm: Once baked, let cool for a few minutes, then serve warm.
