- 1/2 cup sliced fresh strawberries
- 8 slices brioche or Texas toast
- 2 large eggs

- 1/2 tsp vanilla extract
- Butter, for frying
- Maple syrup, for serving
- Powdered sugar, for serving
- Extra strawberries, for serving

Instructions
- Combine the softened cream cheese, powdered sugar, and 1/4 tsp vanilla extract in a mixing bowl. Whisk until smooth and creamy.
- Spread a layer of the cheesecake mixture on 4 slices of bread, topping with sliced strawberries, then placing another slice on top.
- Whisk together the eggs, milk, 1/2 tsp cinnamon, and 1/2 tsp vanilla in a shallow bowl.
- Dip each sandwich into the egg mixture, coating both sides.
- Heat a skillet over medium heat with butter.
- Cook each stuffed sandwich for 2-3 minutes per side until golden brown.
- Serve warm with maple syrup, powdered sugar, extra strawberries, and whipped cream.
Notes
Make the filling ahead of time and refrigerate to speed up preparation. You can also customize the recipe with different fruits or toppings.
