- 12 ounces rigatoni pasta
- 1 pound steak (ribeye or sirloin), cut into bite-sized pieces
- 2 tablespoons olive oil
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1 cup blue cheese, crumbled
- 1 cup shredded mozzarella cheese (for topping)
- 1 teaspoon dried thyme
- 1 teaspoon black pepper
- Salt to taste
- Fresh parsley, chopped, for garnish
Instructions
- Cook the Pasta: Bring a large pot of salted water to a boil. Add the rigatoni and cook until al dente. Drain and set aside, saving a bit of pasta water.
- Sear the Steak: In a large skillet over medium-high heat, add the olive oil. When hot, add the steak pieces in batches, and sear until browned, about 3-4 minutes. Remove and set aside.
- Sauté Aromatics: In the same skillet, add the diced onion and sauté for about 4 minutes until soft. Add the minced garlic and cook for an additional minute until fragrant.
- Create the Creamy Sauce: Lower the heat and pour in the heavy cream, stirring to incorporate the bits from the pan. Add thyme, black pepper, and a pinch of salt. Let simmer until it thickens slightly. Stir in blue cheese until melted.
- Combine with Pasta: Add rigatoni and seared steak to the sauce, mixing to coat thoroughly. Use reserved pasta water if needed to loosen the mixture.
- Assemble in Baking Dish: Pour the mixture into a greased baking dish and sprinkle with shredded mozzarella cheese over the top.
- Bake to Perfection: Preheat oven to 350°F (175°C) and bake for 20-25 minutes or until bubbling and golden.
- Garnish and Serve: Remove from oven, let sit for a few minutes, garnish with parsley, and enjoy!

Make-ahead: Prepare rigatoni and sauce a day ahead and bake when ready. Customize with vegetables or different cheeses as desired.
