Description

Ingredients

  • 4 bone-in, skin-on chicken pieces (or boneless chicken breasts/thighs)
  • 2 cups seasonal vegetables (asparagus, bell peppers, zucchini, radishes)
  • 2 tablespoons olive oil
  • 1 tablespoon chopped fresh rosemary
  • 1 tablespoon chopped fresh thyme
  • 1 tablespoon chopped fresh parsley
  • 3 cloves garlic, minced
  • Juice of 1 lemon
  • Salt and pepper to taste

Instructions
