- 1 lb Ground Beef or Turkey
- 2 cups Fresh Spinach
- 4 cloves Garlic, minced
- 1 small Onion, finely chopped (optional)
- 1 large Egg
- 1 cup Breadcrumbs
- 1/2 cup Grated Parmesan Cheese
- 8 oz Low-Moisture Mozzarella Cubes
- 1 tbsp Italian Seasoning
- Salt and Pepper to taste
- 1/2 tsp Red Pepper Flakes
- 1 tbsp Chopped Parsley
Instructions
- Preheat your oven to 400°F (200°C).
- Sauté the spinach and onion in a sauté pan with olive oil until softened.
- Combine ground meat, sautéed spinach, garlic, egg, breadcrumbs, Parmesan, Italian seasoning, salt, pepper, and red pepper flakes in a mixing bowl.
- Incorporate the mozzarella cubes gently into the mixture.
- Shape into 1-2 inch meatballs and place on a greased baking sheet.
- Bake for 20-25 minutes or until golden brown and cooked through (internal temperature of 165°F).
- Serve with a sprinkle of fresh parsley.
