Description

A vibrant and refreshing dish featuring grilled vegetables marinated in olive oil and fresh herbs, perfect for summer gatherings.


Ingredients

  • 2 zucchini, cut into bite-sized pieces
  • 2 bell peppers, cut into bite-sized pieces
  • 1 cup corn, grilled and kernels sliced off
  • 1 cup cherry tomatoes, halved
  • 2 tablespoons olive oil
  • 2 tablespoons fresh basil, chopped
  • 1 teaspoon dried oregano
  • 2 tablespoons lemon juice
  • Salt & pepper, to taste

Instructions

  1. Prepare your ingredients: Wash and chop the vegetables. Grill corn cobs, let cool, and slice off kernels.
  2. Create the marinade: Whisk together olive oil, basil, oregano, lemon juice, salt, and pepper.
  3. Marinate the vegetables: Toss prepared vegetables in the marinade and let sit for 15-20 minutes.
  4. Preheat the grill to medium-high heat.
  5. Grill the veggies: Place marinated vegetables on the grill and cook for 8-10 minutes, turning occasionally.
  6. Serve & enjoy: Transfer grilled vegetables to a serving plate, drizzle with lemon juice, and sprinkle with fresh herbs.

Notes

Feel free to customize with additional toppings like feta or chickpeas. Can be made ahead by marinating the night before.
