Description

Delight in these flaky cinnamon rolls filled with a rich pistachio filling and topped with a luscious honey glaze.


Ingredients

  • 1 cup whole milk
  • 1 tbsp dry active yeast
  • 2 large eggs (at room temperature)
  • 1/3 cup unsalted butter (melted)
  • 2 tsp vanilla extract
  • 1/2 cup white granulated sugar
  • 1 tsp sea salt
  • 4 to 4 1/2 cups all-purpose flour
  • 1 1/2 cups shelled, roasted pistachios
  • 1/2 cup white granulated sugar (for filling)
  • 2 tsp ground cinnamon
  • 1 tsp ground cardamom
  • 2/3 cup unsalted butter (softened)
  • 1/4 cup honey
  • 1/2 cup water
  • 1/4 cup lemon juice
  • 2 large egg yolks + 2 tbsp water (for egg wash)
  • 1/3 cup finely diced pistachios (for garnish)

Instructions

  1. Warm the milk gently on the stovetop and sprinkle the yeast on top. Let rest for about 5 minutes until frothy.
  2. Combine the melted butter, sugar, salt, and vanilla extract in a mixing bowl. Whisk in the egg, then add the yeast mixture.
  3. Gradually add the flour one cup at a time until a dough forms. Knead for 5-7 minutes until smooth and elastic.
  4. Place the dough in a greased bowl, cover, and let it rise until doubled in size, about 1 hour.
  5. Prepare the filling by mashing softened butter, sugar, cinnamon, cardamom, and half the pistachios until creamy.
  6. Preheat the oven to 350°F (175°C). Roll out the dough into a rectangle and spread the filling evenly.
  7. Roll the dough tightly from one edge and cut into 12 pieces.
  8. Arrange the rolls on a lined baking sheet, cover, and let rise for another 30 minutes.
  9. Brush with the egg wash and bake for 25-30 minutes until golden brown.
  10. Prepare the glaze by whisking together honey, lemon juice, and water. Drizzle over warm rolls after baking.

Notes

Allow ingredients to reach room temperature for best texture. These rolls can be made ahead of time and refrigerated before baking.
