- 1 cup (120 g) all-purpose flour
- 1/2 cup (115 g) unsalted butter, softened
- 1/4 cup (30 g) powdered sugar
- 2 packages (3.4 oz / 96 g each) instant pistachio pudding mix
- 2 1/2 cups (600 ml) cold milk
- 1 cup (240 ml) heavy cream
- 1 1/2 cups (360 ml) heavy whipping cream
- 2 tablespoons powdered sugar
- 1 teaspoon vanilla extract
- 1/4 cup (30 g) chopped pistachios (optional)
Instructions
- Preheat your oven to 175°C (350°F) and grease a 9×13-inch baking dish.
- Cream together the softened butter and powdered sugar until light and fluffy.
- Add the flour gradually, mixing until a soft dough forms.
- Press this dough evenly into the bottom of your prepared baking dish.
- Bake for 15-18 minutes until lightly golden.
- Remove the dish from the oven and let it cool completely.
- Whisk together the instant pistachio pudding mix and cold milk until thickened.
- Fold in the heavy cream until fully combined.
- Spread the pistachio mixture over the cooled cookie base.
- Whip the heavy cream with powdered sugar and vanilla until soft peaks form.
- Spread the whipped cream over the pistachio layer.
- Garnish with chopped pistachios and optional shaved chocolate or coconut flakes.
- Refrigerate for at least 3-4 hours or overnight to set.
