Description

Indulge in delightful Pistachio Dream Cookie Bars with a crunchy cookie base, luscious pistachio cream, and airy whipped topping.


Ingredients

  • 1 cup (120 g) all-purpose flour
  • 1/2 cup (115 g) unsalted butter, softened
  • 1/4 cup (30 g) powdered sugar
  • 2 packages (3.4 oz / 96 g each) instant pistachio pudding mix
  • 2 1/2 cups (600 ml) cold milk
  • 1 cup (240 ml) heavy cream
  • 1 1/2 cups (360 ml) heavy whipping cream
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract
  • 1/4 cup (30 g) chopped pistachios (optional)

Instructions

  1. Preheat your oven to 175°C (350°F) and grease a 9×13-inch baking dish.
  2. Cream together the softened butter and powdered sugar until light and fluffy.
  3. Add the flour gradually, mixing until a soft dough forms.
  4. Press this dough evenly into the bottom of your prepared baking dish.
  5. Bake for 15-18 minutes until lightly golden.
  6. Remove the dish from the oven and let it cool completely.
  7. Whisk together the instant pistachio pudding mix and cold milk until thickened.
  8. Fold in the heavy cream until fully combined.
  9. Spread the pistachio mixture over the cooled cookie base.
  10. Whip the heavy cream with powdered sugar and vanilla until soft peaks form.
  11. Spread the whipped cream over the pistachio layer.
  12. Garnish with chopped pistachios and optional shaved chocolate or coconut flakes.
  13. Refrigerate for at least 3-4 hours or overnight to set.

Notes

These bars can be made ahead and stored in the refrigerator for up to 5 days.
