Instructions
- Preheat the oven to 350°F (175°C).
- Combine graham cracker crumbs and melted butter until well mixed.
- Press this mixture firmly into the bottom of a 9-inch springform pan to form the crust.
- Bake the crust for 10 minutes, then allow it to cool.
- Beat together softened cream cheese, powdered sugar, and vanilla extract until smooth.
- Fold in the heavy cream until well combined.
- Add pistachio paste and mix until fully incorporated.
- Pour the filling over the cooled crust and smooth the top.
- Refrigerate for at least 4 hours or until set.
- Sprinkle chopped pistachios on top for garnish before serving.
