Instructions
- Preheat the oven to 325°F (160°C).
- Prepare the 9×9 inch baking pan by greasing it or lining with parchment paper.
- Make the crust by mixing graham cracker crumbs, 1/4 cup sugar, and melted butter. Press into the prepared pan.
- Create the filling by beating softened cream cheese with an electric mixer until smooth. Add remaining sugar and blend.
- Incorporate vanilla, then add eggs one at a time, blending smoothly after each. Add lemon juice and zest, mixing until smooth.
- Pour the creamy filling over the crust. For a marbled effect, drop spoonfuls of reserved lemon juice and zest on top, swirling with a knife.
- Bake for about 35 minutes, until the center is set but slightly jiggly.
- Cool at room temperature, then refrigerate for at least 4 hours before slicing.
