Description

Rich, velvety cheesecake swirled with the zesty brightness of fresh lemons, perfectly balancing sweet and tart notes.


Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup sugar
  • 1/2 cup butter, melted
  • 16 oz cream cheese, softened
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1/4 cup lemon juice
  • Zest of 1 lemon

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. Prepare the 9×9 inch baking pan by greasing it or lining with parchment paper.
  3. Make the crust by mixing graham cracker crumbs, 1/4 cup sugar, and melted butter. Press into the prepared pan.
  4. Create the filling by beating softened cream cheese with an electric mixer until smooth. Add remaining sugar and blend.
  5. Incorporate vanilla, then add eggs one at a time, blending smoothly after each. Add lemon juice and zest, mixing until smooth.
  6. Pour the creamy filling over the crust. For a marbled effect, drop spoonfuls of reserved lemon juice and zest on top, swirling with a knife.
  7. Bake for about 35 minutes, until the center is set but slightly jiggly.
  8. Cool at room temperature, then refrigerate for at least 4 hours before slicing.
