Description

A light and creamy Key Lime Mousse that balances tartness and sweetness, perfect for any occasion.


Ingredients

  • 1/2 cup key lime juice
  • 1 tablespoon lime zest
  • 3 large egg yolks
  • 1/2 cup granulated sugar
  • 1 teaspoon unflavored gelatin powder
  • 1/4 cup cold water
  • 1 cup heavy whipping cream

Instructions

  1. Prepare the gelatin by sprinkling the powder over cold water in a small bowl and letting it bloom for 5 minutes.
  2. Whisk the egg yolks and sugar together in a separate bowl until pale and thick.
  3. Set up a double boiler, placing the egg yolk mixture over simmering water, stirring frequently for 4-5 minutes until thickened.
  4. Remove from heat and stir in the lime juice and zest.
  5. Incorporate the bloomed gelatin into the lime mixture, stirring until dissolved.
  6. Whip the heavy cream in a chilled mixing bowl until soft peaks form.
  7. Fold a third of the whipped cream into the lime mixture to lighten it, then gently fold in the remaining whipped cream.
  8. Spoon the mousse into serving dishes and refrigerate for at least four hours or overnight.

Notes

Prepare the mousse a day ahead for best flavor; consider adding coconut or vanilla for different tastes.
