Ingredients

- 1/2 cup key lime juice
- 1 tablespoon lime zest
- 3 large egg yolks
- 1/2 cup granulated sugar
- 1 teaspoon unflavored gelatin powder
- 1/4 cup cold water
- 1 cup heavy whipping cream
Instructions
- Prepare the gelatin by sprinkling the powder over cold water in a small bowl and letting it bloom for 5 minutes.
- Whisk the egg yolks and sugar together in a separate bowl until pale and thick.
- Set up a double boiler, placing the egg yolk mixture over simmering water, stirring frequently for 4-5 minutes until thickened.
- Remove from heat and stir in the lime juice and zest.
- Incorporate the bloomed gelatin into the lime mixture, stirring until dissolved.
- Whip the heavy cream in a chilled mixing bowl until soft peaks form.
- Fold a third of the whipped cream into the lime mixture to lighten it, then gently fold in the remaining whipped cream.
- Spoon the mousse into serving dishes and refrigerate for at least four hours or overnight.
Notes
Prepare the mousse a day ahead for best flavor; consider adding coconut or vanilla for different tastes.
