- 8 large eggs
- 1/4 cup milk or cream
- Salt and pepper to taste
- 1 tablespoon olive oil or butter
- 1 cup fresh spinach, sautéed
- 1/2 cup shredded cheese
- 1 avocado, sliced
- Cooked bacon or sausage (optional)
Instructions
- Whisk together the eggs, milk or cream, salt, and pepper until frothy.
- Heat a non-stick skillet over medium-low heat and melt the olive oil or butter.
- Pour a portion of the egg mixture into the skillet, spreading it into a thin layer and cooking for 2-3 minutes.
- Flip the wrap and cook for another 1-2 minutes until golden and firm.
- Layer the wrap with sautéed spinach, cheese, avocado slices, and bacon or sausage, if desired.
- Roll up the egg wrap, tucking in the ingredients as you go.
