A delightful blend of fudgy brownies and chewy cookies in one indulgent treat.
Ingredients

- 120 g dark chocolate
- 115 g butter
- 2 large eggs
- 150 g demerara sugar
- 50 g caster sugar
- 25 g cocoa powder
- 115 g plain flour
- 60 g chocolate chips (optional)
Instructions
- Preheat your oven to 180°C (350°F). Line a baking tray with parchment paper.
- In a microwave-safe bowl, melt the dark chocolate and butter together.
- While the chocolate mixture melts, whisk the demerara and caster sugars in a separate bowl.
- Beat in the eggs to the sugars until the mixture turns pale and creamy.
- Slowly pour in the melted chocolate mixture while stirring gently.
- Sift the cocoa powder and flour into the chocolate mixture and fold gently with a spatula.
- If using chocolate chips, fold them in now.
- Spoon dollops of brownie batter onto the prepared tray.
- Use cookie dough to layer atop the brownie dollops.
- Bake for 20-25 minutes until the edges are firm and the center is soft.
- Let cool slightly before enjoying.
Notes
Make the batter ahead and bake fresh for a warm treat. Be careful not to overmix the batter.
