Description

A delightful blend of fudgy brownies and chewy cookies in one indulgent treat.


Ingredients

Scale
  • 120 g dark chocolate
  • 115 g butter
  • 2 large eggs
  • 150 g demerara sugar
  • 50 g caster sugar
  • 25 g cocoa powder
  • 115 g plain flour
  • 60 g chocolate chips (optional)

Instructions

  1. Preheat your oven to 180°C (350°F). Line a baking tray with parchment paper.
  2. In a microwave-safe bowl, melt the dark chocolate and butter together.
  3. While the chocolate mixture melts, whisk the demerara and caster sugars in a separate bowl.
  4. Beat in the eggs to the sugars until the mixture turns pale and creamy.
  5. Slowly pour in the melted chocolate mixture while stirring gently.
  6. Sift the cocoa powder and flour into the chocolate mixture and fold gently with a spatula.
  7. If using chocolate chips, fold them in now.
  8. Spoon dollops of brownie batter onto the prepared tray.
  9. Use cookie dough to layer atop the brownie dollops.
  10. Bake for 20-25 minutes until the edges are firm and the center is soft.
  11. Let cool slightly before enjoying.

Notes

Make the batter ahead and bake fresh for a warm treat. Be careful not to overmix the batter.
