- 500g chicken breast, cut into bite-sized pieces
- 500g broccoli, cut into florets
- 400g pasta (e.g., penne, farfalle, or fusilli)
- 250ml heavy cream
- 100g grated Parmesan cheese, plus more for serving
- 2 garlic cloves, finely chopped
- 1 onion, finely diced
- 2 tablespoons olive oil
- 1 teaspoon dried oregano
- ½ teaspoon dried thyme
- Salt and pepper to taste
- A pinch of chili flakes for some heat
- Fresh parsley, chopped, for garnish
- 50g butter (optional)
- 100ml chicken broth
Instructions
- Season the chicken with salt, pepper, oregano, and thyme.
- Cook the chicken in a skillet with olive oil until golden brown and cooked through, then set aside.
- Blanch the broccoli in boiling salted water for 2-3 minutes, then drain and cool.
- Cook the pasta according to package instructions, saving one cup of pasta water.
- Make the sauce by sautéing onion in butter, adding garlic, then pouring in the cream and simmering.
- Combine the chicken and broccoli into the sauce along with the pasta, mixing well.
- Serve immediately, garnishing with parsley and extra Parmesan.
Notes
