Description

Delicious chicken breasts stuffed with cheese and herbs, drizzled with a creamy parmesan sauce for an indulgent meal.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1/2 cup cream cheese
  • 1/2 cup mozzarella cheese
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1/4 cup freshly grated parmesan cheese
  • 2 tablespoons fresh parsley, chopped
  • 2 tablespoons fresh thyme, chopped
  • Salt and pepper, to taste
  • Olive oil, for sautéing

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Pound the chicken breasts until they are about 1/4 inch thick and season with salt and pepper.
  3. Mix together herbs and cream cheese in a mixing bowl.
  4. Spoon the herb-cheese mixture onto each chicken breast and fold over to create ‘pillows’; secure with toothpicks if needed.
  5. Sauté garlic in a skillet with olive oil over medium heat until fragrant, about 1-2 minutes.
  6. Add heavy cream and parmesan cheese to the skillet, stirring until smooth.
  7. Place the stuffed chicken in a baking dish and pour creamy sauce over the top.
  8. Bake for 20-25 minutes or until chicken is cooked through and golden.

Notes

Make ahead by prepping filled chicken and refrigerating, then add sauce before baking.
