- 4 boneless, skinless chicken breasts
- 1/2 cup cream cheese
- 1/2 cup mozzarella cheese
- 2 cloves garlic, minced
- 1 cup heavy cream
- 1/4 cup freshly grated parmesan cheese
- 2 tablespoons fresh parsley, chopped
- 2 tablespoons fresh thyme, chopped
- Salt and pepper, to taste
- Olive oil, for sautéing
Instructions
- Preheat the oven to 375°F (190°C).
- Pound the chicken breasts until they are about 1/4 inch thick and season with salt and pepper.
- Mix together herbs and cream cheese in a mixing bowl.
- Spoon the herb-cheese mixture onto each chicken breast and fold over to create ‘pillows’; secure with toothpicks if needed.
- Sauté garlic in a skillet with olive oil over medium heat until fragrant, about 1-2 minutes.
- Add heavy cream and parmesan cheese to the skillet, stirring until smooth.
- Place the stuffed chicken in a baking dish and pour creamy sauce over the top.
- Bake for 20-25 minutes or until chicken is cooked through and golden.
Notes
Make ahead by prepping filled chicken and refrigerating, then add sauce before baking.
