Instructions
- Preheat your oven to 325°F (160°C).
- Prepare the crust by mixing the graham cracker crumbs with melted butter and pressing it into a 9-inch springform pan.
- Create the filling by beating softened cream cheese until smooth, then gradually adding sugar.
- Mix in sour cream, lemon juice, lime juice, lemon zest, and lime zest until velvety.
- Incorporate eggs one at a time, mixing well after each addition.
- Fold in cherries and chopped pistachios.
- Pour the cheesecake filling over the crust and smooth the top.
- Bake for 50-60 minutes until the center is slightly jiggly.
- Cool slowly in the oven with the door ajar.
- Chill in the refrigerator for at least 4 hours or overnight.
- Serve chilled, garnished with extra cherries and pistachios.
