Description

A delightful Cherry Pistachio Cheesecake featuring a creamy filling, sweet cherries, and crunchy pistachios, perfect for any occasion.


Ingredients

  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1 cup cream cheese, softened
  • 1 cup sour cream
  • 1 cup sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup fresh cherries, pitted and halved
  • 1/2 cup pistachios, chopped
  • Zest of 1 lemon
  • Zest of 1 lime
  • Juice of 1 lemon
  • Juice of 1 lime

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. Prepare the crust by mixing the graham cracker crumbs with melted butter and pressing it into a 9-inch springform pan.
  3. Create the filling by beating softened cream cheese until smooth, then gradually adding sugar.
  4. Mix in sour cream, lemon juice, lime juice, lemon zest, and lime zest until velvety.
  5. Incorporate eggs one at a time, mixing well after each addition.
  6. Fold in cherries and chopped pistachios.
  7. Pour the cheesecake filling over the crust and smooth the top.
  8. Bake for 50-60 minutes until the center is slightly jiggly.
  9. Cool slowly in the oven with the door ajar.
  10. Chill in the refrigerator for at least 4 hours or overnight.
  11. Serve chilled, garnished with extra cherries and pistachios.
