- Lasagna noodles
- 2 cups shredded cooked chicken
- 1 cup ricotta cheese
- 1.5 cups mozzarella cheese, divided
- 1/2 cup parmesan cheese
- 1 cup Alfredo sauce
- 1 cup spinach (optional)
- 1 tsp garlic powder
- 1 tsp Italian seasoning
- Salt to taste
Instructions
- Boil the noodles in salted water until al dente, drain, and lay flat.
- Mix the filling in a bowl with chicken, ricotta, half of the mozzarella, spinach, garlic powder, Italian seasoning, and salt.
- Prepare the Alfredo sauce by whisking butter, cream, garlic, and parmesan over medium heat until smooth.
- Assemble the rolls by spreading filling on each noodle and rolling tightly, placing seam side down in a baking dish.
- Add remaining Alfredo sauce and sprinkle with remaining mozzarella and parmesan.
- Bake covered at 350°F (175°C) for 25 minutes, then uncovered for another 10-15 minutes until golden.
- Rest for 5-10 minutes before serving.
