  • 1 teaspoon vanilla extract
  • 8 oz cream cheese, softened
  • 1/2 cup sugar
  • 1 egg
  • 1 cup fresh blackberries
  • 1/4 cup sugar
  • 1 tablespoon lemon juice

Instructions

  1. Preheat the oven to 350°F (175°C). Grease your 9×9 inch baking dish with butter or parchment paper.
  2. Prepare the biscuit base: In a medium bowl, combine flour, powdered sugar, melted butter, and salt. Mix until dough holds together; press evenly into the dish. Bake for 15 minutes or until golden.
  3. Create the pistachio cream: In a food processor, blend pistachios and sugar until finely ground. Add heavy cream and vanilla; blend until smooth.
  4. Make the cream cheese layer: In a bowl, beat cream cheese, sugar, and egg with an electric mixer until smooth. Spread over the baked biscuit base.
  5. Layer the pistachio cream: Pour pistachio mixture over cream cheese layer and spread evenly. Bake for an additional 25-30 minutes.
  6. Prepare the blackberry topping: In a saucepan, mix blackberries, sugar, and lemon juice. Cook over medium heat until thickened, about 5-7 minutes.
  7. Assemble and chill: Spread the blackberry topping over the baked layers. Refrigerate for at least 2 hours before cutting.

Notes
