Description

Delightful rolls filled with apricots and walnuts, wrapped in a soft, golden dough; perfect for breakfast or dessert.


Ingredients

  • 1 cup whole milk
  • 1 tbsp dry active yeast
  • 1/3 cup unsalted butter (melted)
  • 2 large eggs (at room temp)
  • 1/2 cup white granulated sugar
  • 1/2 tsp salt
  • 1 tsp vanilla extract
  • 3 1/2 cups all-purpose flour
  • 3/4 cup walnuts (or pecans, almonds, hazelnuts)
  • 1/2 cup dried apricots
  • 3/4 cup poppy seeds
  • 1/2 cup white granulated sugar (for filling)
  • 1/2 cup unsalted butter (soft, not melted)
  • 1 tsp vanilla bean paste (optional)
  • 1/2 cup water (for syrup)
  • 1/2 cup sugar (for syrup)
  • 1 tbsp lemon juice

Instructions

  1. Warm the milk, then add the yeast and let sit until frothy.
  2. Beat the eggs with melted butter, sugar, vanilla extract, and salt until combined.
  3. Combine yeast mixture with egg mixture, gradually adding flour until a soft dough forms.
  4. Knead on a floured surface for 8-10 minutes until smooth.
  5. Prepare nuts and fruit by chopping them and mixing with poppy seeds and sugar.
  6. Mix in softened butter and optional vanilla bean paste until combined.
  7. Roll out the dough into a rectangle and spread the filling evenly.
  8. Roll tightly into a log, slice into 12 pieces, and place on a lined baking sheet.
  9. Cover with a towel and let rise for 30-45 minutes.
  10. Preheat oven to 350°F (175°C).
  11. Bake for 25-30 minutes until golden brown.
  12. Combine water, sugar, and lemon juice in a saucepan, boil, then simmer until thickened for syrup.
  13. Brush syrup over warm rolls after baking.

Notes

Store leftovers in an airtight container at room temperature for 2-3 days or freeze for up to three months.
