- 1 cup whole milk
- 1 tbsp dry active yeast
- 1/3 cup unsalted butter (melted)
- 2 large eggs (at room temp)
- 1/2 cup white granulated sugar
- 1/2 tsp salt
- 1 tsp vanilla extract
- 3 1/2 cups all-purpose flour
- 3/4 cup walnuts (or pecans, almonds, hazelnuts)
- 1/2 cup dried apricots
- 3/4 cup poppy seeds
- 1/2 cup white granulated sugar (for filling)
- 1/2 cup unsalted butter (soft, not melted)
- 1 tsp vanilla bean paste (optional)
- 1/2 cup water (for syrup)
- 1/2 cup sugar (for syrup)
- 1 tbsp lemon juice
Instructions
- Warm the milk, then add the yeast and let sit until frothy.
- Beat the eggs with melted butter, sugar, vanilla extract, and salt until combined.
- Combine yeast mixture with egg mixture, gradually adding flour until a soft dough forms.
- Knead on a floured surface for 8-10 minutes until smooth.
- Prepare nuts and fruit by chopping them and mixing with poppy seeds and sugar.
- Mix in softened butter and optional vanilla bean paste until combined.
- Roll out the dough into a rectangle and spread the filling evenly.
- Roll tightly into a log, slice into 12 pieces, and place on a lined baking sheet.
- Cover with a towel and let rise for 30-45 minutes.
- Preheat oven to 350°F (175°C).
- Bake for 25-30 minutes until golden brown.
- Combine water, sugar, and lemon juice in a saucepan, boil, then simmer until thickened for syrup.
- Brush syrup over warm rolls after baking.
Notes
Store leftovers in an airtight container at room temperature for 2-3 days or freeze for up to three months.
