- 1 cup unsalted butter
- 2 cups granulated sugar
- 4 large eggs
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1 cup semi-sweet chocolate chips
- 1 cup mascarpone cheese
- 1 cup brewed coffee, cooled
- 3 tablespoons coffee liqueur (optional)
- Cocoa powder for dusting
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan.
- In a large bowl, melt the butter and mix in the sugar until smooth. Add the eggs one at a time, then stir in the vanilla extract.
- In another bowl, whisk together the flour, cocoa powder, baking powder, and salt. Fold these dry ingredients into the wet mixture.
- Fold in chocolate chips, then pour half of the batter into the prepared pan and bake for 20 minutes.
- While baking, mix mascarpone cheese with cooled brewed coffee and coffee liqueur until smooth.
- Remove the brownies from the oven and spread the mascarpone mixture evenly over the baked layer. Spoon the remaining batter on top.
- Return to the oven for another 20-25 minutes until a toothpick comes out with a few moist crumbs.
- Cool completely, then dust with cocoa powder before serving.
Notes
Allow brownies to cool completely before serving for the best texture. Store leftovers in an airtight container for up to a week.
