- 2 cups cooked chicken, shredded
- 1/2 cup peanut butter
- 1/4 cup soy sauce
- 2 tablespoons honey
- 1 tablespoon lime juice
- 1/2 teaspoon garlic powder
- 1/2 teaspoon ginger, grated
- 4 large tortillas
- 1 cup shredded carrots
- 1 cup sliced bell peppers
- 1 cup cucumber, sliced
- 1/4 cup chopped cilantro
Instructions
- In a bowl, mix together peanut butter, soy sauce, honey, lime juice, garlic powder, and ginger until smooth.
- In a large mixing bowl, combine shredded chicken with half of the peanut sauce.
- Lay out the tortillas and spread a layer of the remaining peanut sauce on each.
- Top each tortilla with the chicken mixture, shredded carrots, bell peppers, cucumber, and cilantro.
- Roll the tortillas tightly and slice in half to serve.
Notes
- For a vegetarian option, substitute chicken with tofu.
- Feel free to add other vegetables like lettuce or avocado.
