Description

A comforting and hearty casserole made with sweet potatoes and sausage, perfect for family gatherings or a cozy dinner.


Ingredients

  • 2 large sweet potatoes, peeled and diced
  • 1 pound sausage (Italian or your choice)
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup chicken broth
  • 1 teaspoon thyme
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 cup shredded cheese (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet, cook the sausage over medium heat until browned. Remove and set aside.
  3. In the same skillet, sauté the onion and garlic until translucent.
  4. Add the diced sweet potatoes, chicken broth, thyme, paprika, salt, and pepper. Stir well.
  5. Bring to a simmer and cook for about 10 minutes until sweet potatoes are slightly tender.
  6. Combine the sausage back into the skillet and mix well.
  7. Transfer the mixture to a greased casserole dish.
  8. If using, sprinkle cheese on top.
  9. Bake in the preheated oven for 25-30 minutes until the sweet potatoes are fully cooked and the top is golden.

Notes

  • Feel free to add other vegetables like bell peppers or spinach for extra nutrition.
  • This dish can be made ahead of time and reheated.
  • For a spicier version, use spicy sausage or add red pepper flakes.
