- 2 large sweet potatoes, peeled and diced
- 1 pound sausage (Italian or your choice)
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 cup chicken broth
- 1 teaspoon thyme
- 1 teaspoon paprika
- Salt and pepper to taste
- 1 cup shredded cheese (optional)
Instructions
- Preheat the oven to 375°F (190°C).
- In a large skillet, cook the sausage over medium heat until browned. Remove and set aside.
- In the same skillet, sauté the onion and garlic until translucent.
- Add the diced sweet potatoes, chicken broth, thyme, paprika, salt, and pepper. Stir well.
- Bring to a simmer and cook for about 10 minutes until sweet potatoes are slightly tender.
- Combine the sausage back into the skillet and mix well.
- Transfer the mixture to a greased casserole dish.
- If using, sprinkle cheese on top.
- Bake in the preheated oven for 25-30 minutes until the sweet potatoes are fully cooked and the top is golden.
Notes
- Feel free to add other vegetables like bell peppers or spinach for extra nutrition.
- This dish can be made ahead of time and reheated.
- For a spicier version, use spicy sausage or add red pepper flakes.
