- 2 large sweet potatoes, peeled and thinly sliced
- 1 cup heavy cream
- 1 cup grated Gruyère cheese
- 1/2 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1 teaspoon fresh thyme leaves
- Salt and pepper to taste
- Butter for greasing the baking dish
Instructions
- Preheat the oven to 375°F (190°C).
- Grease a baking dish with butter.
- Layer half of the sweet potato slices in the bottom of the dish.
- In a bowl, mix the heavy cream, garlic, thyme, salt, and pepper.
- Pour half of the cream mixture over the sweet potatoes.
- Sprinkle half of the Gruyère and Parmesan cheese over the cream.
- Add the remaining sweet potato slices on top.
- Pour the rest of the cream mixture over the top layer.
- Finish with the remaining cheese.
- Bake for 45-50 minutes, or until the sweet potatoes are tender and the top is golden brown.
Notes
- For a spicier version, add a pinch of cayenne pepper to the cream mixture.
- Let the gratin sit for 10 minutes before serving to allow it to set.
- This dish can be prepared ahead of time and baked just before serving.
