- 1 egg, beaten
- Oil for frying
Instructions
- In a large bowl, combine the mashed sweet potatoes, breadcrumbs, Parmesan cheese, green onions, garlic powder, paprika, salt, and pepper.
- Add the beaten egg and mix until well combined.
- Form the mixture into small patties or croquettes.
- Heat oil in a frying pan over medium heat.
- Fry the croquettes until golden brown on both sides, about 3-4 minutes per side.
- Remove from the pan and drain on paper towels.
- Serve warm with your favorite dipping sauce.

- For a vegan option, substitute the egg with a flaxseed egg.
