Description

A delicious and festive casserole combining sweet potatoes and cranberries, perfect for holiday gatherings.


Ingredients

  • 4 cups sweet potatoes, peeled and cubed
  • 2 cups cranberries, fresh or frozen
  • 1 cup vegetable broth
  • 1 cup stuffing mix
  • 1/2 cup onion, chopped
  • 1/2 cup celery, chopped
  • 1/4 cup pecans, chopped
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large pot, boil sweet potatoes until tender, about 15 minutes. Drain and mash.
  3. In a skillet, sauté onion and celery until soft.
  4. In a large bowl, combine mashed sweet potatoes, sautéed vegetables, cranberries, stuffing mix, vegetable broth, and spices.
  5. Transfer the mixture to a greased casserole dish.
  6. Bake for 30-35 minutes until heated through and slightly golden on top.

Notes

  • For a vegan option, ensure the stuffing mix is plant-based.
  • Can be made ahead of time and reheated before serving.
