- 4 cups sweet potatoes, peeled and cubed
- 2 cups cranberries, fresh or frozen
- 1 cup vegetable broth
- 1 cup stuffing mix
- 1/2 cup onion, chopped
- 1/2 cup celery, chopped
- 1/4 cup pecans, chopped
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- Salt and pepper to taste
Instructions
- Preheat the oven to 350°F (175°C).
- In a large pot, boil sweet potatoes until tender, about 15 minutes. Drain and mash.
- In a skillet, sauté onion and celery until soft.
- In a large bowl, combine mashed sweet potatoes, sautéed vegetables, cranberries, stuffing mix, vegetable broth, and spices.
- Transfer the mixture to a greased casserole dish.
- Bake for 30-35 minutes until heated through and slightly golden on top.
Notes
- For a vegan option, ensure the stuffing mix is plant-based.
- Can be made ahead of time and reheated before serving.
