Description

A delicious and vibrant Street Corn Chicken Rice Bowl that combines grilled chicken, sweet corn, and flavorful spices for a satisfying meal.


Ingredients

  • 2 cups cooked rice
  • 1 lb grilled chicken, sliced
  • 1 cup sweet corn, grilled
  • 1/2 cup diced red onion
  • 1/2 cup diced bell pepper
  • 1/4 cup fresh cilantro, chopped
  • 1 avocado, sliced
  • 1 lime, juiced
  • 1 tsp chili powder
  • Salt and pepper to taste

Instructions

  1. Cook the rice according to package instructions and set aside.
  2. Grill the chicken until fully cooked, then slice it into strips.
  3. Grill the sweet corn until charred, then cut the kernels off the cob.
  4. In a large bowl, combine the cooked rice, grilled chicken, sweet corn, red onion, bell pepper, and cilantro.
