Description

Delicious jumbo pasta shells stuffed with a creamy ricotta and spinach filling, topped with marinara and gooey mozzarella.


Ingredients

  • 12 jumbo pasta shells
  • 2 cups ricotta cheese
  • 1 cup cooked and chopped spinach
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated parmesan cheese
  • 1 egg
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 jar marinara sauce
  • Fresh basil for garnish (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cook the pasta shells according to the package directions until al dente. Drain and set aside.
  3. In a mixing bowl, combine ricotta cheese, cooked spinach, 1/2 cup of mozzarella cheese, parmesan cheese, egg, garlic powder, salt, and pepper. Mix well.
  4. Stuff each pasta shell with the cheese and spinach mixture.
  5. Spread a layer of marinara sauce on the bottom of a baking dish.
  6. Place the stuffed shells in the dish and top with the remaining marinara sauce. Sprinkle with remaining mozzarella cheese.
  7. Cover the dish with aluminum foil and bake for 25 minutes.
  8. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.
  9. Garnish with fresh basil if desired and serve.

Notes

You can use cottage cheese for a lighter option or frozen spinach if needed.
