Description

Deliciously vibrant noodle bowls featuring tender chicken, fresh broccoli, and silky noodles, all infused with the warmth of garlic and a hint of spice.


Ingredients

  • 1 lb boneless, skinless chicken breast, sliced
  • 2 cups broccoli florets
  • 8 oz thin rice noodles (or egg noodles)
  • 4 cloves garlic, minced
  • 2 tbsp soy sauce
  • 1 tbsp chili paste
  • 2 tbsp olive oil
  • Salt and pepper, to taste

Instructions

  1. Cook the noodles according to package instructions. Drain and set aside.
  2. Heat olive oil in a large skillet over medium heat.
  3. Sauté the minced garlic until it becomes golden.
  4. Add the sliced chicken to the skillet and cook until browned and fully cooked through, about 5-7 minutes.
  5. Toss in the broccoli florets and stir-fry for 3-4 minutes until bright green and tender.
  6. Incorporate soy sauce and chili paste, blending everything together.
  7. Combine the cooked noodles with the other ingredients, ensuring even coating.
  8. Season with salt and pepper to taste.
  9. Serve hot and enjoy!

Notes

For meal prepping, cook chicken and broccoli in advance, and toss everything together just before serving.
