Ingredients

- 2 cups cooked chicken, shredded
- 1 cup corn (canned or frozen)
- 1 cup black beans, drained and rinsed
- 1 cup cherry tomatoes, halved
- 1 avocado, diced
- 1/2 cup red onion, diced
- 1/4 cup fresh cilantro, chopped
- 1/4 cup lime juice
- 1/4 cup olive oil
- 1 teaspoon cumin
- Salt and pepper to taste
Instructions
- In a large bowl, combine the shredded chicken, corn, black beans, cherry tomatoes, avocado, red onion, and cilantro.
- In a separate small bowl, whisk together the lime juice, olive oil, cumin, salt, and pepper until well blended.
- Pour the dressing over the chicken-veggie mixture and toss gently to coat all ingredients.
- Serve immediately while ingredients are fresh and crisp.
Notes
Add avocado and dressing just before serving to keep them fresh. Use pre-cooked rotisserie chicken for convenience.
