Description

A vibrant salad featuring tender chicken, sweet corn, black beans, and a zesty lime dressing, perfect for any gathering.


Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup corn (canned or frozen)
  • 1 cup black beans, drained and rinsed
  • 1 cup cherry tomatoes, halved
  • 1 avocado, diced
  • 1/2 cup red onion, diced
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup lime juice
  • 1/4 cup olive oil
  • 1 teaspoon cumin
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the shredded chicken, corn, black beans, cherry tomatoes, avocado, red onion, and cilantro.
  2. In a separate small bowl, whisk together the lime juice, olive oil, cumin, salt, and pepper until well blended.
  3. Pour the dressing over the chicken-veggie mixture and toss gently to coat all ingredients.
  4. Serve immediately while ingredients are fresh and crisp.

Notes

Add avocado and dressing just before serving to keep them fresh. Use pre-cooked rotisserie chicken for convenience.
