- 3–4 lbs beef roast
- 1 cup cranberry juice
- 1/2 cup balsamic vinegar
- 1 onion, chopped
- 4 cloves garlic, minced
- 2 cups beef broth
- 2 tablespoons brown sugar
- 1 teaspoon thyme
- Salt and pepper to taste
Instructions
- Preheat the oven to 325°F (163°C).
- Season the beef roast with salt and pepper.
- In a large skillet, sear the beef on all sides until browned.
- Transfer the beef to a roasting pan.
- In the same skillet, sauté the onion and garlic until softened.
- Add cranberry juice, balsamic vinegar, beef broth, brown sugar, and thyme to the skillet; stir to combine.
- Pour the mixture over the beef roast in the roasting pan.
- Cover the pan with foil and braise in the oven for 3-4 hours, or until the meat is tender.
- Remove the foil for the last 30 minutes to allow the glaze to thicken.
- Let the roast rest for 10 minutes before slicing and serving.
Notes
- For a richer flavor, marinate the beef overnight in the glaze.
- Serve with mashed potatoes or roasted vegetables.
- Leftovers can be stored in the refrigerator for up to 3 days.
