Description

A delicious slow-braised beef roast enhanced with a tangy cranberry balsamic glaze, perfect for festive gatherings.


Ingredients

  • 34 lbs beef roast
  • 1 cup cranberry juice
  • 1/2 cup balsamic vinegar
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 2 cups beef broth
  • 2 tablespoons brown sugar
  • 1 teaspoon thyme
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 325°F (163°C).
  2. Season the beef roast with salt and pepper.
  3. In a large skillet, sear the beef on all sides until browned.
  4. Transfer the beef to a roasting pan.
  5. In the same skillet, sauté the onion and garlic until softened.
  6. Add cranberry juice, balsamic vinegar, beef broth, brown sugar, and thyme to the skillet; stir to combine.
  7. Pour the mixture over the beef roast in the roasting pan.
  8. Cover the pan with foil and braise in the oven for 3-4 hours, or until the meat is tender.
  9. Remove the foil for the last 30 minutes to allow the glaze to thicken.
  10. Let the roast rest for 10 minutes before slicing and serving.

Notes

  • For a richer flavor, marinate the beef overnight in the glaze.
  • Serve with mashed potatoes or roasted vegetables.
  • Leftovers can be stored in the refrigerator for up to 3 days.
