A heartwarming Indian dish combining tender chicken thighs with a rich, spiced sauce, perfect for family dinners and festive occasions.

- 4 pieces Chicken Thighs
- 4 cloves Garlic
- 1 piece Green Chili
- 2 tbsp Fresh Ginger
- 2 pieces Onions
- 1 tsp Turmeric Powder
- 2 tsp Chili Powder
- 2 tsp Ground Cumin
- 2 tsp Ground Coriander
- 1 tsp Garam Masala
- 5 pieces Tomatoes
- 1/2 tsp Lemon Juice
- 1 tbsp Fresh Coriander
- 3 tbsp Vegetable Oil
- Salt, to taste
- 100 ml Water
Instructions
- In a heavy-bottomed pan, heat 3 tablespoons of vegetable oil on medium flame until shimmering.
- Add the diced onions and stir. Cook until golden brown, about 8–10 minutes.
- Toss in the chopped garlic, fresh ginger, and green chili. Sauté for an additional 2-3 minutes.
- Lower the heat slightly and add turmeric, chili powder, cumin, coriander, and garam masala. Stir for about a minute.
- Add the chopped tomatoes and cook for about 5 minutes until softened.
- Add the chicken thighs, searing them for about 5 minutes.
- Pour in 100 ml of water, season with salt, and bring to a gentle simmer. Cover and cook for 20-25 minutes.
- Stir in lemon juice and freshly chopped coriander before serving.
Notes
Make the dish a day ahead for deeper flavors. You can also cook in an Instant Pot if pressed for time.
