- 2 pounds of baby potatoes
- 3 tablespoons of olive oil
- 2 tablespoons of fresh sage, chopped

Instructions
- Preheat the oven to 425°F (220°C).
- Wash and halve the baby potatoes.
- In a large bowl, toss the potatoes with olive oil, chopped sage, garlic powder, salt, and pepper.
- Spread the potatoes in a single layer on a baking sheet.
- Roast in the preheated oven for 25-30 minutes, or until golden brown and crispy, stirring halfway through.
- Remove from the oven and let cool slightly before serving.
