Description

Delightfully roasted cabbage wedges paired with a tangy Onion Dijon sauce, perfect for any celebration or weeknight dinner.

Ingredients

Scale
  • 1 medium green cabbage
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 cup sour cream
  • 2 tablespoons Dijon mustard
  • 1 small onion, finely chopped
  • 1 tablespoon lemon juice
  • Fresh herbs (parsley or chives) for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Remove the outer leaves of the cabbage and cut it into wedges, keeping the core intact.
  3. Place the cabbage wedges on a baking sheet. Drizzle with olive oil and sprinkle with salt, pepper, and garlic powder. Toss to coat.
  4. Roast for 25–35 minutes, flipping halfway through until edges are golden brown.
  5. While the cabbage roasts, mix sour cream, Dijon mustard, chopped onion, and lemon juice in a bowl. Whisk until smooth.
  6. Once the cabbage is golden and tender, remove from oven and drizzle with Onion Dijon Sauce.
  7. Garnish with freshly chopped herbs before serving.

Notes

Make-ahead tips: Prepare the sauce a day in advance for enhanced flavor. Avoid overcrowding the baking sheet for even roasting.
