- 1 medium green cabbage
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 cup sour cream
- 2 tablespoons Dijon mustard
- 1 small onion, finely chopped
- 1 tablespoon lemon juice
- Fresh herbs (parsley or chives) for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- Remove the outer leaves of the cabbage and cut it into wedges, keeping the core intact.
- Place the cabbage wedges on a baking sheet. Drizzle with olive oil and sprinkle with salt, pepper, and garlic powder. Toss to coat.
- Roast for 25–35 minutes, flipping halfway through until edges are golden brown.
- While the cabbage roasts, mix sour cream, Dijon mustard, chopped onion, and lemon juice in a bowl. Whisk until smooth.
- Once the cabbage is golden and tender, remove from oven and drizzle with Onion Dijon Sauce.
- Garnish with freshly chopped herbs before serving.
