Description

Pumpkin Toffee Crunch Bars are a delicious fall treat that combines the flavors of pumpkin, toffee, and a crunchy topping for a perfect dessert.


Ingredients

  • 1 cup pumpkin puree
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1 cup toffee bits
  • 1/2 cup chopped pecans (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. In a large bowl, mix together the pumpkin puree, brown sugar, granulated sugar, and melted butter until well combined.
  3. Add the eggs and vanilla extract, mixing until smooth.
  4. In another bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
  6. Fold in the toffee bits and chopped pecans, if using.
  7. Pour the batter into the prepared baking pan and spread evenly.
  8. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  9. Allow to cool in the pan before cutting into bars.

Notes

  • Store leftovers in an airtight container at room temperature for up to 3 days.
  • These bars can be frozen for up to 2 months; just thaw before serving.
  • For an extra crunch, sprinkle additional toffee bits on top before baking.
