Description

A warm and hearty pumpkin chili made with ground turkey, perfect for fall.


Ingredients

  • 1 lb ground turkey
  • 1 can (15 oz) pumpkin puree
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) diced tomatoes
  • 1 cup chicken broth
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. In a large pot, heat olive oil over medium heat. Add chopped onion and garlic, sauté until softened.
  2. Add ground turkey to the pot, cooking until browned.
  3. Stir in chili powder, cumin, paprika, salt, and pepper, cooking for another minute.
  4. Add pumpkin puree, black beans, diced tomatoes, and chicken broth. Stir well to combine.
  5. Bring the mixture to a simmer, then reduce heat and let it cook for 20-30 minutes, stirring occasionally.
  6. Adjust seasoning if necessary and serve hot.

Notes

  • For a spicier chili, add diced jalapeños or cayenne pepper.
  • This chili can be made ahead of time and tastes even better the next day.
  • Serve with cornbread or over rice for a complete meal.
