Description
A warm and hearty pumpkin chili made with ground turkey, perfect for fall.

- 1 lb ground turkey
- 1 can (15 oz) pumpkin puree
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) diced tomatoes
- 1 cup chicken broth
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- Olive oil for cooking
Instructions
- In a large pot, heat olive oil over medium heat. Add chopped onion and garlic, sauté until softened.
- Add ground turkey to the pot, cooking until browned.
- Stir in chili powder, cumin, paprika, salt, and pepper, cooking for another minute.
- Add pumpkin puree, black beans, diced tomatoes, and chicken broth. Stir well to combine.
- Bring the mixture to a simmer, then reduce heat and let it cook for 20-30 minutes, stirring occasionally.
- Adjust seasoning if necessary and serve hot.
Notes
- For a spicier chili, add diced jalapeños or cayenne pepper.
- This chili can be made ahead of time and tastes even better the next day.
- Serve with cornbread or over rice for a complete meal.
