- 12 Large Eggs
- 1/3 cup Mayonnaise
- 1 tablespoon Dijon Mustard
- 1 teaspoon White-Wine Vinegar OR 2 tablespoons of Pickle Juice
- Salt & Pepper to Taste
- Food Coloring of Your Choice (Pink Recommended)
- Optional Decorations: Edible flowers, fresh herbs, or paprika
Instructions
- Boil the eggs and let them sit covered for 12-15 minutes.
- Cool the eggs in an ice bath for 10 minutes before peeling.
- Slice each egg in half and scoop out the yolks into a mixing bowl.
- Add food coloring to the yolks and mix until the desired shade is reached.
- Combine mayonnaise, Dijon mustard, vinegar or pickle juice, salt, and pepper with the yolks and mix until smooth.
- Pipe or spoon the yolk mixture back into the egg whites, decorating as desired.
- Refrigerate for at least 30 minutes and serve cold.
