- 2 skinless, boneless chicken breasts
- 1 cup fresh pineapple, diced
- 1 tablespoon olive oil
- 1 teaspoon chili powder
- 1 teaspoon cumin
- Salt and pepper to taste
- 8 small corn tortillas
- Fresh cilantro for garnish
- Lime wedges for serving
Instructions
- Preheat the grill to medium-high heat.
- In a bowl, combine olive oil, chili powder, cumin, salt, and pepper.
- Coat the chicken breasts in the mixture and let marinate for 15 minutes.
- Grill the chicken for about 6-7 minutes on each side, or until fully cooked.
- Remove the chicken from the grill and let it rest for a few minutes before slicing.
- Warm the corn tortillas on the grill for about 30 seconds on each side.
- To assemble the tacos, place sliced grilled chicken and diced pineapple on each tortilla.
- Garnish with fresh cilantro and serve with lime wedges.
