Description

Delightful tacos filled with grilled chicken, sweet pineapple, and zesty lime, perfect for any gathering.


Ingredients

  • 2 skinless, boneless chicken breasts
  • 1 cup fresh pineapple, diced
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 8 small corn tortillas
  • Fresh cilantro for garnish
  • Lime wedges for serving

Instructions

  1. Preheat the grill to medium-high heat.
  2. In a bowl, combine olive oil, chili powder, cumin, salt, and pepper.
  3. Coat the chicken breasts in the mixture and let marinate for 15 minutes.
  4. Grill the chicken for about 6-7 minutes on each side, or until fully cooked.
  5. Remove the chicken from the grill and let it rest for a few minutes before slicing.
  6. Warm the corn tortillas on the grill for about 30 seconds on each side.
  7. To assemble the tacos, place sliced grilled chicken and diced pineapple on each tortilla.
  8. Garnish with fresh cilantro and serve with lime wedges.

Notes

You can marinate the chicken a few hours in advance or even the night before for extra flavor.
