- 3 ripe bananas
- 2 cups almond flour
- 1/4 cup unsweetened cocoa powder
- 1/4 cup honey or maple syrup (optional)
- 3 large eggs
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup sugar-free chocolate chips
Instructions
- Preheat your oven to 350°F (175°C) and grease your loaf pan.
- Mash the bananas in a large mixing bowl until smooth.
- Combine wet ingredients: Add eggs, honey (if desired), and vanilla to the bananas and whisk.
- Mix the dry ingredients in another bowl: Whisk together almond flour, cocoa powder, baking soda, and salt.
- Gradually add dry ingredients to wet mixture, stirring until just combined.
- Fold in the chocolate chips.
- Pour batter into prepared loaf pan and smooth the top.
- Bake for 45-55 minutes, checking for doneness with a toothpick.
- Allow to cool in the pan for a few minutes, then transfer to a wire rack to cool completely before slicing.
Notes
For the best results, use overripe bananas for sweetness. This bread can be made ahead and stored in an airtight container.
