- 2 lbs beef chuck, cut into 1-inch pieces
- 1 cup pearl barley
- 4 cups beef broth
- 2 cups carrots, diced
- 1 cup celery, diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 tbsp tomato paste
- 1 tsp dried thyme
- 1 tsp dried rosemary
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- Heat olive oil in a large pot over medium heat.
- Add the beef and brown on all sides.
- Stir in the onion, garlic, carrots, and celery; cook until softened.
- Add the tomato paste, thyme, and rosemary; stir to combine.
- Pour in the beef broth and bring to a boil.
- Add the pearl barley, reduce heat, and simmer for about 1.5 hours or until the beef is tender.
- Season with salt and pepper to taste before serving.
Notes
- For a thicker stew, you can mash some of the barley against the side of the pot.
- This stew can be made ahead of time and reheated.
- Feel free to add other vegetables like potatoes or peas.
