Description

A hearty and comforting one-pot beef and barley stew perfect for a cozy dinner.


Ingredients

  • 2 lbs beef chuck, cut into 1-inch pieces
  • 1 cup pearl barley
  • 4 cups beef broth
  • 2 cups carrots, diced
  • 1 cup celery, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 tbsp tomato paste
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add the beef and brown on all sides.
  3. Stir in the onion, garlic, carrots, and celery; cook until softened.
  4. Add the tomato paste, thyme, and rosemary; stir to combine.
  5. Pour in the beef broth and bring to a boil.
  6. Add the pearl barley, reduce heat, and simmer for about 1.5 hours or until the beef is tender.
  7. Season with salt and pepper to taste before serving.

Notes

  • For a thicker stew, you can mash some of the barley against the side of the pot.
  • This stew can be made ahead of time and reheated.
  • Feel free to add other vegetables like potatoes or peas.
