Description

Delicious Mediterranean quesadillas filled with spinach, feta, mozzarella, and red onion, perfect for a quick meal or snack.


Ingredients

Scale
  • 2 cups fresh spinach
  • 1 cup feta cheese, crumbled
  • 1 cup mozzarella cheese, shredded
  • 1 medium red onion, thinly sliced
  • 4 large flour tortillas
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Heat 1 tablespoon of olive oil in a skillet over medium heat.
  2. Add the sliced red onion and sauté until softened, about 5 minutes.
  3. Add the fresh spinach and cook until wilted, about 2 minutes.
  4. Remove the skillet from heat and stir in the feta and mozzarella cheese.
  5. Place a tortilla in the skillet and spread a portion of the cheese and spinach mixture on one half.
  6. Fold the tortilla over and cook until golden brown on both sides, about 3-4 minutes per side.
  7. Repeat with the remaining tortillas and filling.
  8. Slice into wedges and serve warm.

Notes

  • Feel free to add other vegetables like bell peppers or mushrooms.
  • Serve with a side of tzatziki or salsa for dipping.
  • These quesadillas can be made ahead and reheated in the oven.
