Delicious Mediterranean quesadillas filled with spinach, feta, mozzarella, and red onion, perfect for a quick meal or snack.
Ingredients

- 2 cups fresh spinach
- 1 cup feta cheese, crumbled
- 1 cup mozzarella cheese, shredded
- 1 medium red onion, thinly sliced
- 4 large flour tortillas
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Heat 1 tablespoon of olive oil in a skillet over medium heat.
- Add the sliced red onion and sauté until softened, about 5 minutes.
- Add the fresh spinach and cook until wilted, about 2 minutes.
- Remove the skillet from heat and stir in the feta and mozzarella cheese.
- Place a tortilla in the skillet and spread a portion of the cheese and spinach mixture on one half.
- Fold the tortilla over and cook until golden brown on both sides, about 3-4 minutes per side.
- Repeat with the remaining tortillas and filling.
- Slice into wedges and serve warm.
Notes
- Feel free to add other vegetables like bell peppers or mushrooms.
- Serve with a side of tzatziki or salsa for dipping.
- These quesadillas can be made ahead and reheated in the oven.
