Description

Delicious quesadillas filled with creamy cheeses, earthy spinach, and crisp onions, perfect for a quick meal or gathering.


Ingredients

  • 4 flour tortillas
  • 1 cup fresh spinach (chopped)
  • 1/2 cup shredded mozzarella cheese
  • 1/2 cup crumbled feta cheese
  • 1 small tomato (diced)
  • 1/4 cup red onion (thinly sliced)
  • 1 tablespoon olive oil
  • Black pepper (to taste)

Instructions

  1. In a mixing bowl, combine mozzarella cheese, feta cheese, chopped spinach, diced tomato, thinly sliced red onion, and a sprinkle of black pepper. Mix well.
  2. Lay one tortilla flat, place one-fourth of the filling on one half of the tortilla, and fold the other side over.
  3. Heat a non-stick skillet on medium and drizzle olive oil to coat.
  4. Place the folded tortilla in the skillet and cook for 3-4 minutes until golden brown.
  5. Gently flip the quesadilla and cook for another 3-4 minutes until crispy.
  6. Remove, slice into wedges, and serve warm.

Notes

Make the filling ahead of time to reduce prep for busy nights. Remain mindful of portion sizes to avoid overstuffing.
