- 4 flour tortillas
- 1 cup fresh spinach (chopped)
- 1/2 cup shredded mozzarella cheese
- 1/2 cup crumbled feta cheese
- 1 small tomato (diced)
- 1/4 cup red onion (thinly sliced)
- 1 tablespoon olive oil
- Black pepper (to taste)
Instructions
- In a mixing bowl, combine mozzarella cheese, feta cheese, chopped spinach, diced tomato, thinly sliced red onion, and a sprinkle of black pepper. Mix well.
- Lay one tortilla flat, place one-fourth of the filling on one half of the tortilla, and fold the other side over.
- Heat a non-stick skillet on medium and drizzle olive oil to coat.
- Place the folded tortilla in the skillet and cook for 3-4 minutes until golden brown.
- Gently flip the quesadilla and cook for another 3-4 minutes until crispy.
- Remove, slice into wedges, and serve warm.
