- 4 boneless, skinless chicken breasts (about 1.5 lbs total)
- 1/4 cup olive oil
- 1/4 cup fresh lemon juice
- 2 tsp dried oregano
- 3 cloves garlic, minced
- 1 tsp kosher salt
- 1 tsp black pepper, freshly ground
- 1 1/2 cups long-grain white rice
- 3 cups chicken broth
- 2 Tbsp fresh parsley, chopped
- 2 Tbsp fresh dill, chopped
- 1 Tbsp butter or olive oil for toasting rice
- 1 cup plain Greek yogurt
- 1/2 cucumber, grated and squeezed dry
- 1 Tbsp fresh lemon juice (for tzatziki)
- 1 Tbsp fresh dill, chopped (for tzatziki)
- 1 clove garlic, minced (for tzatziki)
- Salt, to taste
Instructions
- Marinate the chicken in a mixture of olive oil, lemon juice, oregano, minced garlic, salt, and pepper for at least 30 minutes.
- Prepare the tzatziki by mixing Greek yogurt, grated cucumber, lemon juice, dill, and minced garlic; chill.
- Cook the rice by toasting it in butter or olive oil, adding chicken broth, then cover and simmer until fluffy.
- Grill the marinated chicken on medium-high heat for 6-8 minutes per side until cooked through.
- Serve the grilled chicken over herbed rice topped with tzatziki and garnish with herbs.
Notes
Marinate the chicken up to 4 hours for the best flavor. Let the chicken rest after grilling to maintain juiciness.
