Description

Grilled chicken breasts marinated in olive oil, lemon juice, and herbs, served with herbed rice and tzatziki.


Ingredients

  • 4 boneless, skinless chicken breasts (about 1.5 lbs total)
  • 1/4 cup olive oil
  • 1/4 cup fresh lemon juice
  • 2 tsp dried oregano
  • 3 cloves garlic, minced
  • 1 tsp kosher salt
  • 1 tsp black pepper, freshly ground
  • 1 1/2 cups long-grain white rice
  • 3 cups chicken broth
  • 2 Tbsp fresh parsley, chopped
  • 2 Tbsp fresh dill, chopped
  • 1 Tbsp butter or olive oil for toasting rice
  • 1 cup plain Greek yogurt
  • 1/2 cucumber, grated and squeezed dry
  • 1 Tbsp fresh lemon juice (for tzatziki)
  • 1 Tbsp fresh dill, chopped (for tzatziki)
  • 1 clove garlic, minced (for tzatziki)
  • Salt, to taste

Instructions

  1. Marinate the chicken in a mixture of olive oil, lemon juice, oregano, minced garlic, salt, and pepper for at least 30 minutes.
  2. Prepare the tzatziki by mixing Greek yogurt, grated cucumber, lemon juice, dill, and minced garlic; chill.
  3. Cook the rice by toasting it in butter or olive oil, adding chicken broth, then cover and simmer until fluffy.
  4. Grill the marinated chicken on medium-high heat for 6-8 minutes per side until cooked through.
  5. Serve the grilled chicken over herbed rice topped with tzatziki and garnish with herbs.

Notes

Marinate the chicken up to 4 hours for the best flavor. Let the chicken rest after grilling to maintain juiciness.
