A vibrant and flavorful grilled chicken dish infused with citrus, garlic, and fresh herbs, served with a creamy tzatziki and seasoned rice.

- 4 boneless, skinless chicken breasts (about 1.5 lb total)
- 1/4 cup olive oil
- 1/4 cup fresh lemon juice
- 2 tsp dried oregano
- 3 cloves garlic, minced
- 1 tsp kosher salt
- 1 tsp black pepper (freshly ground)
- 1 1/2 cups long-grain white rice
- 3 cups chicken broth
- 2 Tbsp fresh parsley, chopped
- 2 Tbsp fresh dill, chopped
- 1 Tbsp butter or olive oil (for toasting rice)
- 1 cup plain Greek yogurt (full-fat)
- 1/2 cucumber, grated & squeezed dry
- 1 Tbsp fresh lemon juice (for tzatziki)
- 1 Tbsp fresh dill, chopped (for tzatziki)
- 1 clove garlic, minced (for tzatziki)
- Salt (to taste)
Instructions
- Prepare the Marinade: Whisk together olive oil, lemon juice, oregano, garlic, salt, and pepper in a mixing bowl.
- Marinate the Chicken: Place chicken in a shallow dish or zip-top bag, pour marinade over, and refrigerate for at least 30 minutes (up to 4 hours).
- Make the Tzatziki: Grate cucumber and squeeze out excess liquid. Mix yogurt, cucumber, lemon juice, dill, garlic, and salt; chill.
- Cook the Rice: Heat butter or olive oil, toast rice, add broth, boil, cover, and simmer for 15-20 minutes. Fluff with parsley and dill.
- Grill the Chicken: Preheat grill to medium-high, grill chicken for 6-8 minutes per side until cooked through, and let rest for 5 minutes.
- Plate and Serve: Serve rice with sliced chicken on top and drizzle with tzatziki. Garnish with herbs and lemon wedges.
Notes
For a stronger flavor, marinate the chicken the night before. The tzatziki can also be prepared a day in advance.
