Description

A delicious and healthy Mediterranean Chicken Zucchini Bake that combines tender chicken, fresh zucchini, and flavorful Mediterranean spices for a satisfying meal.


Ingredients

  • 2 medium zucchinis, sliced
  • 1 lb chicken breast, cubed
  • 1 cup cherry tomatoes, halved
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup olive oil
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, combine the cubed chicken, sliced zucchini, cherry tomatoes, olive oil, garlic, oregano, basil, salt, and pepper.
  3. Transfer the mixture to a baking dish and spread it evenly.
  4. Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the zucchini is tender.
  5. Remove from the oven and sprinkle with crumbled feta cheese before serving.
