- 4 large parsnips, peeled and cut into sticks
- 3 tablespoons olive oil
- 3 tablespoons pure maple syrup
- Salt and pepper to taste

Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, combine the carrots and parsnips.
- Drizzle with olive oil and maple syrup, then season with salt and pepper.
- Toss until the vegetables are evenly coated.
- Spread the mixture on a baking sheet in a single layer.
- Roast in the preheated oven for 25-30 minutes, or until tender and caramelized, stirring halfway through.
- Remove from the oven and garnish with fresh thyme if desired.
