Description

A delicious side dish featuring sweet maple-roasted carrots and parsnips, perfect for any meal.


Ingredients

  • 4 large carrots, peeled and cut into sticks
  • 4 large parsnips, peeled and cut into sticks
  • 3 tablespoons olive oil
  • 3 tablespoons pure maple syrup
  • Salt and pepper to taste
  • Fresh thyme for garnish (optional)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, combine the carrots and parsnips.
  3. Drizzle with olive oil and maple syrup, then season with salt and pepper.
  4. Toss until the vegetables are evenly coated.
  5. Spread the mixture on a baking sheet in a single layer.
  6. Roast in the preheated oven for 25-30 minutes, or until tender and caramelized, stirring halfway through.
  7. Remove from the oven and garnish with fresh thyme if desired.
