- 4 salmon fillets
- 1/4 cup maple syrup
- 2 tablespoons soy sauce
- 1 tablespoon Dijon mustard
- 1 teaspoon garlic powder
- 1 teaspoon black pepper
- 2 cups mixed vegetables (bell peppers, zucchini, carrots)
- 2 tablespoons olive oil
- Salt to taste
Instructions
- Preheat the oven to 400°F (200°C).
- In a small bowl, mix maple syrup, soy sauce, Dijon mustard, garlic powder, and black pepper.
- Place salmon fillets in a baking dish and pour the maple glaze over them.
- In a separate bowl, toss mixed vegetables with olive oil and salt.
- Spread the vegetables around the salmon in the baking dish.
- Bake for 15-20 minutes or until the salmon is cooked through and the vegetables are tender.
- Serve hot and enjoy!
Notes
- For a spicier kick, add red pepper flakes to the glaze.
- Feel free to substitute the vegetables with your favorites.
