Description

A delicious and healthy meal featuring tender chicken marinated in a maple Dijon sauce, served with roasted sweet potatoes.


Ingredients

  • 2 chicken breasts
  • 1/4 cup maple syrup
  • 2 tablespoons Dijon mustard
  • 2 sweet potatoes, cubed
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, mix maple syrup and Dijon mustard to create the marinade.
  3. Marinate the chicken breasts in the mixture for at least 30 minutes.
  4. Toss the cubed sweet potatoes with olive oil, salt, and pepper.
  5. Spread the sweet potatoes on a baking sheet and roast for 25-30 minutes until tender.
  6. While the sweet potatoes are roasting, cook the marinated chicken in a skillet over medium heat for 6-7 minutes on each side until fully cooked.
  7. Serve the chicken on a bed of roasted sweet potatoes and garnish with fresh parsley.

Notes

  • For extra flavor, let the chicken marinate overnight.
  • Feel free to add other vegetables to the bowl.
  • This dish can be served warm or cold.
