- 2 chicken breasts
- 1/4 cup maple syrup
- 2 tablespoons Dijon mustard
- 2 sweet potatoes, cubed
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- In a bowl, mix maple syrup and Dijon mustard to create the marinade.
- Marinate the chicken breasts in the mixture for at least 30 minutes.
- Toss the cubed sweet potatoes with olive oil, salt, and pepper.
- Spread the sweet potatoes on a baking sheet and roast for 25-30 minutes until tender.
- While the sweet potatoes are roasting, cook the marinated chicken in a skillet over medium heat for 6-7 minutes on each side until fully cooked.
- Serve the chicken on a bed of roasted sweet potatoes and garnish with fresh parsley.
Notes
- For extra flavor, let the chicken marinate overnight.
- Feel free to add other vegetables to the bowl.
