Description

A vibrant and flavorful grilled lime chicken, perfect for summer gatherings and outdoor barbecues.


Ingredients

  • 4 boneless chicken breasts
  • 2 limes (juiced)
  • 1 avocado (diced)
  • 1/4 cup fresh cilantro (chopped)
  • 1 teaspoon chili powder
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. In a bowl, whisk together the lime juice, olive oil, chili powder, salt, and pepper until thoroughly combined.
  2. Place the chicken breasts in the bowl, making sure they are completely coated in the marinade. Marinate for at least 30 minutes (up to 2 hours for best flavor).
  3. Preheat your grill to medium heat.
  4. Remove the chicken from the marinade, letting the excess drip off. Place the chicken on the grill and cook for 6-7 minutes on each side or until it reaches an internal temperature of 165°F.
  5. Remove the chicken from the grill and let it rest for a few minutes before slicing.
  6. Top with diced avocado and chopped cilantro just before serving.

Notes

Make-ahead the marinade the night before for maximum flavor absorption. For cooking alternatives, use an air fryer or oven if grilling isn’t possible.
