- 4 boneless chicken breasts
- 2 limes (juiced)
- 1 avocado (diced)
- 1/4 cup fresh cilantro (chopped)
- 1 teaspoon chili powder
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- In a bowl, whisk together the lime juice, olive oil, chili powder, salt, and pepper until thoroughly combined.
- Place the chicken breasts in the bowl, making sure they are completely coated in the marinade. Marinate for at least 30 minutes (up to 2 hours for best flavor).
- Preheat your grill to medium heat.
- Remove the chicken from the marinade, letting the excess drip off. Place the chicken on the grill and cook for 6-7 minutes on each side or until it reaches an internal temperature of 165°F.
- Remove the chicken from the grill and let it rest for a few minutes before slicing.
- Top with diced avocado and chopped cilantro just before serving.
Notes
Make-ahead the marinade the night before for maximum flavor absorption. For cooking alternatives, use an air fryer or oven if grilling isn’t possible.
