Description

A flavorful dish that combines succulent grilled chicken with creamy avocado and fresh cherry tomatoes, perfect for summer gatherings.


Ingredients

  • 4 chicken breasts, skinless and boneless
  • 2 ripe avocados
  • 1 cup cherry tomatoes, halved
  • 1/4 cup lime juice, freshly squeezed
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. In a mixing bowl, whisk together lime juice, olive oil, minced garlic, cumin, chili powder, salt, and pepper until combined.
  2. Place the chicken breasts in a resealable bag and pour the marinade over them. Seal the bag tightly and refrigerate for at least 30 minutes, preferably up to 2 hours.
  3. Preheat the grill to medium-high heat.
  4. Remove the chicken from the marinade, allowing excess to drip off, and grill for about 6-7 minutes on each side, or until the internal temperature reaches 165°F.
  5. While the chicken grills, slice the avocados and prepare the cherry tomatoes.
  6. Once cooked, let the chicken rest for a few minutes. Serve topped with avocado slices, cherry tomatoes, and fresh cilantro.

Notes

For extra flavor, marinate the chicken overnight. You can also use an air fryer or oven as cooking alternatives.
